Fruity and well-rounded

Dark purple colour with purple highlights. Straightforward nose, initially austere, opening up to grilled pepper, sweet spices, white pepper, hints of ginger, garrigue, then peppermint. Supple attack, well-balanced, fine body, elegance, lovely character with red fruit and red pepper jam, satiny tannins, a hint of savoury saltiness. Supple, persistent finish.

Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Domain and appellation

  • DOMAINE DES ROCHES NEUVES

    The grapes are harvested by hand and sorted on a table when they arrive at the winery. Fermentation of the wine in wooden vats with very light pumping over just to wet the cap, followed by maceration for 18 to 22 days depending on the vintage. Malolactic fermentation in 100 hl wooden vats from Stoeckinger. Aged for 12 months in 228-litre barrels and round tuns made by Stoeckinger.
