CHAPOUTIER
This wine comes from the Neve hillside in the commune of Ampuis, facing south-south-east. The soil is composed of schist and micaschist, with a few seams of earth in the middle part of the hillside. Vinification takes place in crude concrete vats. The entire harvest is destemmed. Alcoholic fermentation is carried out using indigenous yeasts. During fermentation, the temperature is gradually allowed to rise to 30-32°C. Vatting lasts 4 to 5 weeks, with regular pumping over at the start of the maceration, followed by a few punchings of the cap. Maceration is completed by working the lees over the last 3 weeks. Daily tastings in the vat enable us to adjust the various operations to suit the wine, and thus determine the date of bottling.
