Our oenologists' opinion
Fruity and light
The open, straightforward nose has a modern style, combining notes of English candy, pomegranate, vanilla and candied strawberry, with a touch of techno to underline its contemporary character.
The acidic attack is both frank and delicious, marked by notes of pomegranate, redcurrant and candied strawberry.
The medium-bodied wine is easy to drink, with a strong character.
The fleshy finish stretches out on notes of redcurrant and pomegranate, with a subtle hint of white pepper.
The persistence is pleasant, and the profile is distinguished by less CO₂ and muted bitterness compared to the previous batch.

Features
Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.
Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.
Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.
Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

CHÂTEAU CAVALIER
Acquired by the Castel family in 2000, Château Cavalier captivated them with the charm of its vineyard and the richness of its clay-based terroirs, producing perfectly balanced grapes.
This vast estate, bathed in sunlight, is ideally nestled between the Massif des Maures and the foothills of the Alpes du Haut-Var.
Named after the stream that flows through it, the château stands out for the aromatic complexity and minerality of its rosés.
