PAUL MAS
At the end of a path that runs along the Martinollet stream and winds between garrigue, vineyards, and olive trees, lies Château Martinolles, which modestly embraces the impressive heritage of its region. The Abbey of St. Hilaire borders the estate, where in 1531 the method for making sparkling wines was discovered.
The legacy of the Cathars, persecuted by the Catholic Church in the medieval era, has shaped both the spirits and the landscapes. Finally, the rugged terrain and turbulent climate of the region give rise to superb terroirs that provide us with excellent Chardonnay, Mauzac, and Pinot Noir grapes.
Our cuvées reflect this heritage, with wines that have character, faithful to their terroir and origins.
