Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.
Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.
Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

CHÂTEAU BÉLAIR-MONANGE
The origins of Château Bélair-Monange go back to Roman times. Situated on the highest point of the Saint-Emilion limestone plateau, it has long been considered one of the best wines of the appellation. In 1850, it was classified the first wine of Saint-Emilion by Cocks & Feret. In 2008, Etablissements Jean-Pierre Moueix acquired this historic site. The new team immediately set about a complete renovation of the vineyard, the cellar, the underground quarries and the château in order to restore the estate to its historic status. Initially known as Château Bélair, the property was renamed following the acquisition in memory of Anne-Adèle Monange, mother of Jean-Pierre Moueix and the first woman in the family to settle in Saint-Emilion in 1931. Château Bélair-Monange is produced on the most privileged soils of Saint-Emilion. The chalky plots on the plateau contribute to the freshness and minerality.
