Our oenologists' opinion

Fruity and well-rounded

The nose is frank and expressive, opening with aromas of red fruit coulis, evolving towards hints of fresh spices and blackcurrant coulis.

The attack is supple, marked by a frank character and long-lasting red fruit flavours.

The tannins are round and supple, offering a pleasant envelope.

Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Domain and appellation

  • DOMAINE FAIVELEY

Founded in 1825 in Nuits-Saint-Georges, at the heart of the Burgundy wine region, the Domaine Faiveley spans over 120 hectares of vineyards.

The vision of Eve Faiveley and Erwan Faiveley, the 7th generation, is to unveil the greatest terroirs of Burgundy in a style that combines power, finesse, and elegance.

    VINIFICATION & AGEING :

The grapes are handpicked and sorted. Two daily punch-downs are performed to extract the colour, tannins, and aromas from the grape skins. After 15 to 19 days of fermentation, alcoholic fermentation is completed.

The free-run juice is drained by gravity, while a slow, gentle pressing of the pomace results in a press wine of great purity.

The wines are aged for 12 months in French oak barrels (10% of which are new), selected for the fine grain and moderate toasting, in cellars where humidity and temperature remain natural and constant.
