Rôti d'échine Chorizo ManchegoFeatures
Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.
Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.
Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.
Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

The Rioja region is comprised of three sub-regions. Located higher in altitude, the rioja Alta benefits from an oceanic climate. On the region’s east side, the Rioja Baja is hotter and drier with a mediterranean climate. In between, the Rioja Alavesa receives the influence of both climates.

Marqués de Cáceres Excellens
Founded in 1970 by Enrique Forner on his return to Spain after his family's exile to France, and former owner of a grand cru classé in the Haut-Médoc, Marqués de Cáceres today remains anchored in a high-end dynamic. Advised by several wine industry figures such as Professor Emile Peynaud at its creation and Michel Rolland today, the family firm has made the Rioja appellation one of the most prestigious in the world. It is within this framework that allowed it, in 2014, to launch its EXCELLENS collection of exclusive wines intended for selective distribution to restaurants, delicatessens and wine shops (Nicolas exclusivity), of which the Excellens Reserva is the spearhead. A selection in the Rioja Alta sub-region of 25 hectares of vineyard at altitude (between 500 and 600m) from 40 to 45 years old, made up of plots planted on hills with clayey-limestone, ferrous and gravelly soils, bathed by a temperate Atlantic climate.
