Fruity and crisp

Transparent colour, white tints, crystalline, rather thick. Open, fruity nose with fresh cane juice followed by mineral, fresh mint and spice notes. Airy, frank and fresh. Ample attack, quite round, then the alcohol takes over, quite hot and burning. Fruity, full-bodied, fairly persistent finish, with the heat of the alcohol and the minerality. Good cocktail base.

Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Domain and appellation

  • SAINT-JAMES

    An organic rum from a harvest of three parcels spread over 7.49ha (Communes Trinité and Robert). Organic canes cut on July 8 and 9, 2021 and distilled on July 12 with a 74.3% pouring, slowly brought down to 56.5% by small reduction steps.
