DOMAINE DE LA FERME BLANCHE
Three centuries of history for this estate which, since 1714, has remained the property of the same family, currently under the leadership of François Paret, his daughter Jérômine and oenologist Philippe Garnier. Terroir: The estate extends over 30 hectares of hillsides overlooking the sea, facing the Bay of Cassis on clay-limestone soil, some of it very chalky. The Mediterranean climate here offers particularly mild temperatures all year round, with little rain, but sea mists that maintain ideal hygrometry for the vines. Viticulture: The estate has long worked with respect for the environment, and has formalised its working methods by obtaining organic certification. Vinification: The grapes are harvested by hand in small crates and carefully sorted. In 2014, all this care and attention was combined with the renovation of the winery and its vat room, which is equipped with precise temperature control.
