    Sauvignon Blanc thrives beautifully in Pays d’Oc, where the Mediterranean climate, warmer and drier than its native Bordeaux, provides ideal conditions for perfect grape ripening.

     

    This wine is distinguished by fresh citrus and tropical fruit aromas. The influence of sea breezes and the clay-limestone soils of the terroir enhance the freshness and complexity of this grape variety.

     

    Maison Castel carefully selects specific vineyard plots to ensure harvesting at the optimal moment. A meticulous winemaking process follows:

    • Gentle pressing,
    • Cold settling, followed by racking,
    • Alcoholic fermentation at a controlled temperature between 15° and 17°C.

     

    Finally, aging on fine lees for 3 to 4 months refines the aromas, producing wines that are elegant, delicate, and lingering on the palate.
