Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Domain and appellation

  • From the knights of the Hundred Years' War to the Enlightenment philosophers, this historic estate has hosted many notable figures. As a mark of its storied past, Château Olivier's wines have been classified as Grand Cru since 1953.

     

    Terroir: Covering 60 hectares, this vineyard rests on a gravelly soil with an argilo-calcareous subsoil.

     

    Viticulture: The vines are 20 years old for reds and 30 years old for whites. They are pruned using simple and double Guyot methods. Harvesting is done manually, in crates, with selective sorting of the grapes both in the vineyard and at the winery.

     

    Vinification: The wine undergoes alcoholic fermentation for 10 to 30 days at 25-30°C in temperature-controlled tanks, followed by malolactic fermentation in barrels.
