Fruity and well-rounded

Garnet colour. Straightforward, typical and fruity nose of black fruits, notes of blackcurrant jelly, ripe strawberries. Good balance, straightforward, fairly full-bodied, lovely fruit with red fruits, hints of cinnamon and liquorice. The tannins are ripe, frank and straightforward.

Features

Body The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Domain and appellation

Mas Du Novi
Since the 11th century, the Mas du Novi produces quality wines, on the last foothill of the Cevennes, in front of the Mediterranean Sean, peaking at 150 meters. The domain is composed of 42 hectares of vines cultivated organically. The vineyard is bordered by 60 hectares of wood and garrigue.
- Terroir: Each hectare has 4 000 plants. The soil is composed of sandstone.
- Wine-making: A traditional method is used to produce the Merlot de Novi. This organic wine ferments and ages inside stainless steel tanks.
