Fruity and crisp

The nose is straightforward, evoking aromas of fresh blackcurrants and pepper, with a delicate mentholated note, opening up to woody nuances.

 

The attack is supple and well-balanced, while the finish is long and straightforward, revealing a spicy character enriched by red fruit coulis and notes of blackcurrant buds, promising a fine tasting experience.

Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

    • Vinification: After a rigorous selection of the wines, our cellar master applies all his expertise to the blending and aging in our cellar, in order to preserve the softness of the Côtes d’Auxerre red, while imparting the Bailly Lapierre Style.

     

    • Terroir: Limestone stones from the Upper Jurassic (Kimmeridgian and Portlandian: 145 to 160 million years).

     

    Near Auxerre, in the Yonne Valley, in the commune of Saint-Bris-le-Vineux, the cradle of Bailly Lapierre has indeed been located since its inception (1972) in a very old underground quarry whose galleries extend over more than 4 hectares.
