Our oenologists' opinion
The nose opens with woody, toasty notes, followed by aromas of lime and combava. On the palate, the attack is supple, fleshy and well-balanced, with notes of lemon curd, vanilla and café au lait. The finish is toasty and toasted, and needs to mature in the cellar for a few months. A promising wine for laying down.

Features
Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.
Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.
Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

ABBAYE DE LÉRINS
The Sainte Ombeline cuvée comes from a parcel of Chardonnay protected by an Abbey wall, which protects the grapes from the surrounding sea salt. This is why this cuvée is produced with 100% indigenous yeasts; it's the perfect expression of the St Honorat terroir! -
