Fruity and well-rounded

Its open, fruity nose reveals a palette of fresh fruit aromas - grapefruit, white pears - enhanced by sweet notes reminiscent of barley sugar and vanilla.

 

The balance is remarkable, combining enveloping warmth with invigorating freshness, enhanced by hints of lemon zest, treacle and vanilla sugar.

 

The long finish, quite fresh in terms of aroma, pleasantly offsets the alcoholic side.

 

Although the alcohol, which is quite present, finds it hard to melt away completely, the fruit and character of the wine are still very much in evidence, offering an authentic, distinctive expression.

Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Baroko means ‘exuberant’ in Tagalog, the local dialect of Negros Island.

Domain and appellation

  • DON PAPA

    Don Papa Baroko is produced on the island of Negros, Philippines. It is distilled from molasses, locally known as "Black gold", the black gold that comes from one of the many local mills on the island.

     

    It is then aged for several years in American oak barrels.

     

    Our Master Blender then selects the most expressive barrels, choosing those that most strongly reveal the vanilla and fruit notes.

     

    A touch of local sugarcane is added to the blend to impart indulgent flavours. Finally, it is cold-filtered and bottled at 40°.
