Our oenologists' opinion
Fruity and crisp
A brilliant, crystal-clear medium lemon-yellow colour, with a frank, fresh nose of white flowers, citrus zest, white pepper and then praline.
Well-balanced, frank, straightforward, medium body, lovely freshness, finesse, elegance, fine, fairly creamy bubbles, good long, fresh, taut finish.
A lovely Champagne as an aperitif, with lobster or lobster mayonnaise.

Features
Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.
Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.
Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.
Do you know ?
It takes just 30 minutes to chill a bottle of Champagne with a bucket full of water and ice cubes, compared with 3 hours in the fridge.

Ruinart
It was during a journey to the Abbey of Saint-Germain-des-Prés that Dom Thierry Ruinart recognised the potential of his native Champagne region for producing the famous sparkling wine.
Officially founded in 1729 by his nephew Nicolas Ruinart, the prestigious house continues to flourish today under its signature: “The oldest Champagne house.”
Terroir:
The champagnes of the Ruinart house are made from grapes sourced from the Côte des Blancs, Montagne de Reims, the slopes of Sézannais, and the Vesle Valley. The Ruinart estate spans nearly 17 hectares of vineyards, but the house sources 90% of its grapes from supplier winegrowers.
Viticulture:
The harvest is done manually.Vinification:
The Ruinart house uses chalk cellars, known as “Crayères”, in the winemaking process. -
