Our oenologists' opinion
Fruity and crisp
Bright and luminous lemon yellow colour, medium bubbles, persistent in the string. Fresh and frank nose of white flowers, white fruits, notes of fresh almonds, hint of white chocolate. Good balance, bubbles present but lacking in creaminess, melting, frank character on chocolate, mocha, slightly toasted notes. Clean finish, still young.

Features
Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.
Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.
Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.
Do you know ?
Classified as a historical monument in 1931, "Les Crayères" date back to Gallo-Roman times. Located under the city of Reims, the stones extracted from these cellars were used for the city's fortifications. Offering ideal conditions for the fermentation and maturation of wine, the Ruinart champagne house was the first of the great houses to use them.

RUINART
It was during a trip to the abbey of Saint-Germain-des-Prés that Dom Thierry Ruinart realised the potential of his native Champagne region to produce the famous bubbly wine. Officially founded in 1729 by his nephew Nicolas Ruinart. Today, the prestigious house continues to thrive under its motto: "The oldest house in Champagne". This vintage was marked by extreme drought during the vine cycle (20% less rain than the ten-year average) and a great deal of sunshine (23% more). The beginning of August, and therefore the ripening period, was particularly hot and dry. The second half of August, on the other hand, was cool and very wet. Fortunately, the return of dry weather during the first week of September enabled the grapes to ripen well: the harvest began on 8 September in this cool, dry climate, before the return of the rains in the second fortnight, which meant that we had to do some sorting.
