Powerful bouquet
Bright, deep lemon yellow colour, fine, regular and persistent bubbles. Nice complex nose of citrus fruits, lemon zest, hint of orange blossom then brioche bread, hints of mocha, smoky hint almost of incense. Good balance, frank, fine, creamy bubbles, melted, nice character with a touch of minerality that adds to the aromas of the nose, freshness. Long, tense, sapid finish. For the aperitif, but can also be served with shellfish, fish in light butter, sweetbreads...
